When the weather changes and starts to become cold soup is always one of those comfort foods we enjoy. This easy recipe, Potato Soup, is also great to have the day after a big ham meal such as Thanksgiving or Christmas. The leftovers can be chopped and added in to create a delicious soup. My girls always ask for more ham! 

Just a few tips:

  • When I cook bacon I save the bacon grease to use for later. I always have a stash in my freezer! For this recipe I pull out some of that saved grease to use. If you do not have saved bacon grease cook up a couple strips of bacon. Chop the bacon after it is cooked to add to the soup just before serving.
  • Watch the sauteed mixture carefully on low heat. Do not let the garlic burn because it turns bitter.
  • When I do not have ham from a previous meal I like to use 2-3 ham steaks.
  • When I have some pepper jack cheese I add two slices of it at the end instead of the cheddar/colby jack mixture to give it more heat.
  • Sometimes I like to let everyone top their soup with extra cheese, green onions, and bacon.
